My currently questionable status as a vegetarian aside, why must otherwise vegetarian foods use meat by-products for flavour? I just ate a Budget Gourmet stir fry dinner whose flavouring was made with chicken fat. The average consumer might not care, but to me it smelled like cat-food. I am off the opinion that you shouldn’t use meat for flavour unless necessary. I mean, why make us poor vegetarians examine the small print of your ingredients even when our meal only contain rice and string beans? Worse yet are restaurants who use bacon in their otherwise only vegetarian dishes and refuse to alter their recipes. Victims are usually potato skins, broccoli bites, chilli, bean dip, and tortilla soup.
